From first sip I was enthralled. Classic, lip-smacking good Loire Valley Sauvignon Blanc. Upon learning that Pabiot is one of just three organic growers in the appellation and the first to be certified biodynamic, it was no wonder the wine had such vibrancy, happy grapes make the best wine.

Harvest is all manual, no commercials yeasts are used, and fermentation takes place in stainless steel and concrete and the wines sees 12-14 months of time on the lees.
