100% Montepulciano from the Provinces of Chieti and Teramo (Abruzzo) grown on medium-textured clay soils with south-east exposure, hand harvested and obtained from a saignée (15–20%) of the Montepulciano must, followed by cold fermentation and ageing on fine lees in stainless steel vats certified biodynamic / hand harvested. Notes of sour cherry, pomegranate and mediterranean herbs. Pair it with Smoked Black Cod Rillettes on Crostini with Radishes & Sprouts.
