90% Carricante/10% other local varieties. From  three parcels of bush-trained vines over 80 years old on the east face or versante est of Mt. Etna. The farming is organic and all work and harvest by hand. The soils are sandy volcanic ash and the elevation ranges from 750 to 900 meters.  The bunches are destemmed and fermented spontaneously with native yeasts and without sulfur in concrete without temperature control. Maceration lasts for 2 days. The wine is aged for 10 months in tonneaux and then bottled without fining or filtration and with a tiny amount of sulfur.

Here we have a laser focused, saline, mouthwatering wine with sneaky complexity and a long finish. If you ask real nice I might sell you a bottle!!!!
